Underwater cellaring is a completely new technique in the world of spirits and the first liqueur to be subjected to this process was our Elixir Falernum. Initial research conducted by universities and independent laboratories indicates promising results , highlighting several benefits for the taste and quality of spirits.

The underwater cellar of our Elixir Falernum
We chose to use this technique for our Elixir Falernum, focusing on the action of enriching the flavors through underwater cellaring. The result was a liqueur completely enhanced by 12 months of refinement in water, with flavors that have become much more intense and refined.

Here are some reasons that led us to choose underwater cellaring:
- Greater roundness and complexity : Several studies have found that aging at sea for 6 months led to a 20% reduction in volatile compounds responsible for harshness in spirits. At the same time, a 15% increase in finer and more persistent aromatic notes was observed , giving the distillate a more complex and rounded profile.
- Lower oxidation : a 30% lower oxygen content has been highlighted in liqueurs aged at sea compared to those aged in traditional barrels, this data suggests lower oxidation of the distillate , with a consequent better conservation of its organoleptic characteristics over time.
- Ideal microclimate : the marine microclimate, with constant temperature, absence of light and movement of currents, favors a more harmonious and uniform aging, in fact a homogeneous distribution of the aromatic compounds inside the distillate has been detected, with a 12% reduction in taste variations between the different bottles.
