Petrone Limoncello in Capri for a unique underwater aging process
Following the success of previous underwater experiments with Elixir Falernum and limoncello submerged in the waters of Castel dell'Ovo in Naples, CEO Andrea Petrone chose the splendid setting of the Blue Island. A total of 450 bottles of liqueur will remain for at least one year on the seabed, resting at a depth of 16 meters, a very short distance from the majestic Faraglioni, undisputed symbol of Capri worldwide.
The crate containing the precious cargo was submerged at a scientifically studied point, where the bottles will rest, cradled by marine currents at a constant temperature, completely protected from lunar phases and in a total absence of oxygen and light. A unique aging process that benefits from the exceptional environmental conditions typical of the waters surrounding the island's famous rock giants.

A project of excellence supported by institutions
The high scientific and cultural value of the initiative is attested by prestigious formal recognitions. The event, which proudly participated in the National Made in Italy Day, obtained the patronage of the Municipality of Naples, the University of Naples Federico II, and the Department of Agricultural Sciences. This synergy between institutions and academia underlines the importance of research aimed at enhancing local excellences through science.
During the crossing aboard the motor vessel Patrizia, which departed from Molo Beverello with authorities and industry professionals, the surprising results of studies on batches taken from previous immersions were presented. As explained by Professor Pasquale Ferranti, professor of Food Science and Technology at Federico II, the underwater environment preserves the lemon's most vibrant and natural color, blocking oxidative processes. Furthermore, the impact of constant pressure in the shadow of the Faraglioni has an extraordinarily positive effect on the aromatic bouquet, ensuring a more balanced and harmonious taste.

A celebration for Made in Italy
The immersion of Petrone limoncello in Capri was celebrated with a sensory journey that highlighted Campania's gastronomic excellences. Exceptional chefs and masters, including chef Rosanna Marziale and ice cream master Pina Molitierno, delighted guests on board by offering dishes and ice creams where the scent of lemons and the creaminess of Campania PDO buffalo mozzarella blended into a perfect combination.
