After 12 months of submersion, our Elixir Falernum has returned to the surface, ready to surprise us with its intense aroma, amplified and more structured by underwater aging.
While the first submersion yielded data validated by the Department of Agriculture of the University of Naples Federico II, this time we received definitive scientific confirmation of the organoleptic changes the product undergoes with underwater aging.
An underwater micro-world
The unique microclimate generated on the seabed seems to create optimal conditions for the maturation of liqueurs, similar to what already happens with wines, thanks to several factors: constant temperature, indirect light, moderate and filtered by water, the movement of currents and waves that cradle the bottles, and complete shelter from lunar phases.
Underwater aging is a completely new technique in the world of spirits, and the first liqueur to undergo this process was our Elixir Falernum. Early research conducted by universities and independent laboratories indicates promising results, highlighting several benefits for the taste and quality of spirits.
