Thus, the 1st Edition of the Emergence of Petrone Limoncello successfully concluded, bringing back to the surface, from the waters of the picturesque village of Santa Lucia in Naples, 450 bottles of our iconic Petrone Limoncello aged in the sea.
After a year of aging at a depth of 15 meters, these bottles told a new chapter of our story: a research project that explores the influence of the marine environment on the maturation of liqueurs.
The emergence of Limoncello was not just a symbolic gesture, but the celebration of a pioneering method that combines artisan knowledge and scientific innovation.

During the day of limoncello emergence, the first results of studies conducted in collaboration with the Department of Agriculture of the Federico II University of Naples and the Department of Sciences of the San Raffaele University of Rome were presented. These researches, already started with the previous immersion of Elixir Falernum, aim to compare aging in the sea with traditional cellar aging, analyzing the impact of marine conditions – pressure, salinity, temperature, and current movement – on the organoleptic properties of the liqueurs.
Now, with the Limoncello back on the surface, the spotlight shifts to the laboratories. The coming months will be dedicated to in-depth analysis to understand how the unique conditions of the marine environment have interacted with our Limoncello. The expected results will be fundamental in defining the next steps of our experimentation.
